so how was your week? did you jump on the eating in challenge, or did you sort of semi commit and then totally give up?
i was SO on it all week until friday night. a couple of friends came into town to see harry potter (woooo!!!!! HP7!!!!) and they were stoked to try some delicious SF food.
it was pretty delicious.. but not even close to the foodgasm that was nopa.
so far, i’ve really liked preparing meals and making sure i have enough food with me throughout the day. i’ve spent way less money this week on food than i normally do, and i don’t feel like i’ve had any less fun. i still got to be social, see my friends, and have a good time, but instead of focusing my social gatherings on going out, i worked out with friends, made homemade dinner, or got coffee (that one was ok.. much cheaper and healthier than a whole meal out!)

part of my challenge for myself was to have at least ONE completely original recipe that wasn’t based off of one i found on the many blogs i read daily… and here it is!
the BEST zucchini bread
preheat oven to 350 and grease an 8×8 pan or 2 small loaf pans
-1 1/2 cup whole wheat flour (not pastry)
-1/4 tsp salt
-1 1/2 tsp baking powder
-1 tsp baking soda
– 1 tsp pumpkin pie spice (and more cinnamon added if you love cinnamon like i do)
-1/2 cup almond butter (i used homemade)
-1/2 cup applesauce
-1/2 cup soy or almond milk
-1/4 cup honey (1/2 cup if you like your bread sweeter, and reduce milk to 1/3 cup)
-1 medium zucchini, grated (about 1 1/4 cup)
mix dry together, then add wet. bake for about 40 minutes or until toothpick ( or knife.. who has toothpicks lying around?) comes out clean.
trust me.. this stuff is good. it’s subtly sweet from the honey and applesauce, but hearty enough to be a legit snack. AND its whole wheat, has veggies in it, no refined sugar, and the only fat comes from almond butter (which is good for you anyways!)
