so, its been a while since i last posted.
a longggggg while.
i just looked at my last saved draft.. and it was about packing to move up to SF!
in the meantime, i moved, lived in half of my lovely and generous friend’s room for a month, and am now settled in an amazing place walking (or running!) distance from Golden Gate park!
lots of things in my life have changed in the last 2 months… everything from location to workouts to transportation style (no car, all bus and feet for me, woot woot!)
i never really thought about what my life would be like after i moved and got settled and actually had a LIFE here in san francisco. there is so much to explore, see, experience and eat here in the city! i probably walk about 5 miles a day on average (my calves are ripped) and have started practicing yoga upwards of 3 times a week.. and haven’t been to an actual gym in over 2 weeks!
and can we talk about the food?!?!? SF is seriously a food mecca.. and its all about the local, organically grown and ‘healthy’ food. seriously, there are 3 different places to get vegan donuts within walking distance of my house. unfortunately, vegan does not equal healthy… especially if its a donut!
since the food in the city is so freaking delicious, i have definitely been doing my fair share of indulging (cookies get cancelled out if you walk to the overpriced gourmet artisan cookie shop to get them right?). because of my love for cookies and all things sugar, i decided to make myself a ‘detox’ soup.. which is basically a very easy, filling lentil soup that provides me with fiber, protein and veggies and leaves me feeling like i don’t need another piece of carrot cake (or artisan cookie).
Red and Orange
(sing to the tune of Black and Yellow)
1 cup green lentils
2 medium carrots
2 large garlic cloves
1 medium sweet potato chopped into 1/2 inch pieces (i didn’t peel mine because the skin has so many nutrients in it, but feel free to peel yours)
1/2 large red onion (yellow would work too)
1 can diced tomatoes (no salt added)
1 box (4 cups) hearty veggie broth
1 tbsp olive oil
paprika to taste (about 1 tsp)
heat 1 tbsp olive oil in a soup pot over medium heat
Dice garlic, carrot and onion and add to pot with about 1 tsp paprika (you can add more later if you want). Saute until onion is translucent, then add chopped sweet potato, diced tomato and veggie broth.
Bring to a boil then add 1 cup green lentils. Bring to a simmer over low heat and let simmer for about 30 minutes. Turn off heat and let sit for 10 minutes.
Seriously, this soup was SO easy to make and i am so glad i didn’t add any other seasonings (but if you use low sodium veggie broth you might want to add salt). if it is a little bland for you i would add some pepper or perhaps curry powder. for me it was PERFECT.. simple and delicious.
