i think i might like this…

So, I have to admit.. I’m getting a little bit into this whole blog thing. At first, I was pretty nervous about letting people read into my life and my recipes. No one wants to be judged on their choice of hobby right?

Well, anyways, getting more into writing my blog has revealed a few things about myself…. to myself.

  1. I can’t follow rules to save my life. Every time I try a new recipe, it ends up being something completely different than what I originally planned. The lentil veggie soup from a few posts ago? That was supposed to be a cold lentil salad.
  2. I really really REALLY love to cook. I love that I can take random things around my kitchen and turn it into dinner. (and that I always know my roommate will come in and ask me “What the hell is that?” and I can smugly look over at him and say “To be honest, I’m not sure yet.)
  3. I really like feeding people. Since pretty much everything I make is super healthy, and one of my goals is to help people eat healthier, it makes sense that I would want to feed the people around me, right?
  4. I missed writing! I wrote a lot in high school (instead of sports like the cool kids, I ran the newspaper), but haven’t done much creative writing in a long, long time.
  5. I am actually super excited for people to read my blog and TRY THE RECIPES PEOPLE <— Hint hint get on it, yo!

That said, I guess I am done rambling on about myself for today. Here’s  a recipe for ya. Funny story about this one… it started out as cookies. But then I decided I wanted bars instead. And let me tell you, they are damn good bars. (Just ask the roommate).

Banana Walnut Oatmeal Chocolate Chip Bars

preheat oven to 350

Ingredients:

-3/4 cup whole wheat pastry flour

-1 1/4 cup quick oats (I’m completely addicted to quick oats)

-1/2 tsp baking powder

-1/2 tsp baking soda

-1 tbsp apple cider vinegar

-1/4 tsp salt

-1/2 cup applesauce

-1/4 tsp cinnamon (feel free to load it up though, can’t go wrong with tons of cinnamon)

-2 tbsp ground flaxmeal

-1/4 agave nectar (or maple syrup)

-1/4 cup almond milk (or soy, or cow’s.. whatever you like)

-1 tsp vanilla

-1 tbsp oil (I used safflower, feel free to try canola as well)

-1 large ripe banana (or 2 small ones)

-1/2 cup chocolate chips

-1/2 cup chopped walnuts

Method:

This is not one of those fancy recipes where you have to sift and then add dry to wet… that’s just too many steps for impatient me)

Mash banana in a separate bowl. Mix everything together. Pour mixture into a greased 9×9 pan. Lick the bowl. Bake for approximately 15-20 minutes (until firm.. I like mine a little underbaked).

YUM. Seriously. YUM.
