Starting out small…

So, many people that have seen what I eat for breakfast or have observed me so enthusiastically mashing it together the night before have asked me “What the HELL is that? It looks like poop!”

Well friends, it is not poop… I’ll tell ya that much!

It is a derivative of the Breakfast Cookie, the delicious concoction that has swept the health and fitness blogworld from a blog that I am not embarrassed to say that I am addicted to! (www.fitnessista.com)

Here’s my favorite version:

-1/3 cup quick oats

-1 tablespoon flax meal

-1 heaping tablespoon chocolate brown rice protein (Amazing Meal is amazing, duh, but also expensive. Try a cheaper one, but make sure that you check the nutrition info! No added sugars or unpronounceable ingredients here please!)

-almost 1 full tablespoon cocoa powder

-1 heaping tablespoon crunchy peanut butter

-As much cinnamon as you want (hey, its an antioxidant!)

-about 2-3 splashes of almond milk (depending on how mushy you want it.. it will firm up a little in the fridge)

-1 small banana

add all dry ingredients together in a bowl, then add peanut butter and splashes of milk. Mix together until crumbly. Mash banana in mixture until it is (fairly) smooth. Spread on a small plate (so it looks like a cookie) and put in the fridge overnight. Bust that thing out in the morning and enjoy!

Feel free to experiment with the basic mixture to find what you like the best! It’s awesome just to be able to wake up in the morning and not worry about making breakfast and literally takes 5 minutes to make the night before.
